Seasons Of My Heart Cooking School offers a host of opportunities for everyone interested in food. Our
comprehensive courses and tours give you an insider's knowledge of Mexican culture through its cuisine and an
experience of Mexico most visitors never see. The classes, culinary tours and lectures focus on pre-Hispanic
foods, traditional culinary, medicinal and spiritual herb usage, as well as Spanish influences on the contemporary
Oaxacan kitchen. Some are based on the book and PBS Series Seasons Of My Heart; A Culinary Journey Through Oaxaca,
Mexico. The participation-based classes are combined with market tours and demonstrations in local homes and cottage
industries to immerse the students in Mexican culture. With many different classes and culinary tours to choose
from, we hope to see you soon. Susana Trilling, teacher, chef, writer and television host will teach you to work with the
native foods of Mexico. In Susana's words, "Although I have explored many different types of cooking in my thirty
years of being a chef, the Cocina Mexicana is most certainly the closest to my heart. My mother's parents were
Mexican, and my grandmother used to run a little restaurant in the Hospital of Santa Rosa in San Antonio, Texas.
Her food was Tex-Mex, based on the most incredibly chewy flour tortillas, pinto beans with crispy corn chalupa
shells and exceptional hot tamales. Her cupboard was full of her famous homemade jams, made from the large variety
of fruit trees she nurtured in her yard. As a child, I thought her kitchen was the center of the universe.
Something about the smells there and the language spoken by my grandparents over steaming cups of hot coffee seemed
